I recently read an article about Spelt flour and how it is the most easily digestible grain, high in fibre,it is wheat free but does contain gluten. It has a hard outer shell that has to be removed during the milling process but it looks very similar to wheat. Spelt has a very slight sweet nutty flavour which means it is perfect for baking. I have been experimenting with a few recipes including choc orange cookies and banana and chocolate muffins and they have turned out great. I am definitely going to be trying out some more spelt recipes.
A dear friend of mine asked me to do her wedding cake. The couples all time favourite is Red Velvet so we had an evening of tasting quite few different recipes. all using slightly different methods and resulting in varying texture. In the end I am pleased to say that the one that won the vote was my own recipe. After making quite a lot of red velvets i decided that i would adapt my favourite and very popular chocolate cake. The resulting cake was moist, with a hint of chocolate from the cocoa powder and a deep red colour. Due to the finish of the cake, i had to decorate it at the venue which i was quite nervous about but it all turned out well in the end and it went down so well that i wasn’t quick enough to get a slice!
I just love a moist squiggly brownie, to be honest i am not sure whether there is anything better in life than a brownie, warm from the oven with a mug of tea! Well that was until i started making these little beauties – Double Trouble Brownies. These one’s are (from top to bottom) Twix, Oreo and Jaffa Cake. The possibilities are endless and I have many more delicious combo’s that i am going to try.
This was my first wedding cake and luckily for me the bride was a dream to work with. The only requirements were that it wasn’t a fussy cake and included some lace. So i decided to do a lace design on two of the tiers and then the middle tier was wrapped in a ribbon matching the colour of the bridesmaid dresses.
The bottom tier was a 12″ fruit cake, made with fresh orange zest, mixed peel and the fruit was soaked in fresh orange juice. The middle tier was a 9″ moist buttermilk chocolate cake with real chocolate buttercream and the top tier was a 6″ zingy lemon drizzle cake with lemon buttercream.
A quick snap of Mr and Mrs Gingerbread wedding favours, a few different designs for the couple to choose from and then it will be time to make 200!!
Sorry for the radio silence, I am pleased to say that it is because i have been super busy. As well as doing a lot of my own orders I have also been doing an internship at the fabulous Konditor and Cook. I did 6 weeks as a baker and 6 weeks a decorator, it was great fun and i learnt a lot. It was a brilliant experience to be in a professional kitchen, especially at such a busy time of year. I now have lots of ideas and new skills to put into practice, watch this space! I am also going to update my gallery with some of my latest creations.

I got a request to make this Nike Jordan trainer for a 21st birthday celebration. I was a little nervous when i started carving the shape out of 4 layers of cake and it took quite a lot of patience to get it just right. However i am really really pleased with the result and so was the birthday girl.
After having a blonde moment and baking the wrong flavour cake, it was second time lucky with this CHOCOLATE not vanilla Koi Carp birthday cake. I hope the birthday boy likes it.
