Vegan Cat Cake

One of the more random and bespoke orders that i have done – a 3D cat cake for a vegan! Sure thing I can do this (I think). I have made a few vegan cakes in the past but simple round and square cakes with frosting nothing on this scale before so it was a bit of a leap into the unknown. I used this amazing recipe from Sweet Little Bluebird . The original recipe was actually created during the Great American Depression when eggs, milk and butter were very hard to come by.  It is so easy to make and can be adapted to make a wide range of flavours, you don’t even need a mixer and it can be made and baked in the same bowl so no washing up!

To make my 3D cat cake, I made 2 9 inch round layers, one chocolate and one vanilla. I then made two 8 inch vanilla cakes and the two more of the same size chocolate cakes.  This was then all topped off with a 6 inch round vanilla cake. These were all stacked on top of each other giving me the basic shape of the cat. I levelled each layer off and kept this to crumb and make into a cake pop mix to shape the ears and the tail.
I have done a collage of the stages that the cake went through to show you how i got there. To cover the cake is made a vegan buttercream using Trex  a LOT of icing sugar and vanilla. To colour the face I dusted on cocoa powder and edible dusting powder, the used some food colouring for the piercing blue eyes.

I was pleased with how it turned out and i was told that the cat stole the show at the birthday party so I am a happy baker.

Happy New Year!

I can’t quite believe it but here it is – 2014!!

I do love the start of a new year, full of good intentions,  lots of plans and a new diary. This year I have lots of ideas for Cake Me Caroline, which will require me to work very hard to turn them into a reality, but all very exciting.
I would like to take this opportunity to say thank you to everyone that has ordered from me in the last year, my little business would be nothing without you and I can’t tell you how grateful I am. I also owe a huge thank you to my friends and family for their constant support and encouragement, I love you all.

Sew Over It

Afternoon Tea

I recently worked with the lovely and very talented Charlotte from Penni Black Catering on a some new afternoon tea ideas. We worked on two theme’s “English Country Garden” and “Christmas Afternoon Tea”.  We had a great afternoon, setting up the photos, going from one season to the next.  The cakes that I made for the English Country Garden were:

  • Carrot cakes (shaped like carrots!)
  • Butterfly biscuits
  • Strawberry biscuits
  • Chocolate flower pot cakes
  • Caketails (Cocktail cupcakes) Strawberry daiquiri, Mojito and Pina Colada

Cakes for the Christmas Afternoon Tea were:

Drink Me Eat Me

Apologies for the lack of posts recently, I am pleased to say that it is because i have been a busy bee baking. The last few months have been great, lots of cake orders, a few stalls and i have started to supply a cafe called “Drink Me Eat Me” in West London. I am going to update my gallery with some pics of recent cakes and bakes so please check them out.

At the start of the month I did a stall at the Northcote Road Summer Fete . It was a boiling hot day, lots of families out enjoying the sun and it was also the day of the Wimbledon’t mens finals so there was a great atmosphere. I had a stall next to the lovely Octavia from Be-Bop-a-Lula and her stall of brilliant handmade cards. Lots of people enjoyed my cake and i got to speak to lots of locals and spread the Cake Me Caroline love.

Later on that week I did a sunflower theme wedding cake which i was so pleased with (see pic in gallery) and got such lovely feedback from the happy couple. They said that they had never been to a wedding before where all the cake had been eaten but their cake and cupcakes all went – what more could I ask for!!

Finally, I have started to supply cake to the beautiful cafe Drink Me Eat Me in Hammersmith. The folks of West London seem to be enjoying my cakes which is keeping me busy – I love it! Here is a cake that i delivered this morning, pretty huh?!

Beetroot brownies

I know that I have a brownie addiction, it is safe to say that they are my all time favourite type of cake -ever! So today i thought that i would try and make this fave treat not quite so calorific and make them with beetroot – controversial! Anyway, they were easy to make and i would say that the main thing to remember when making them is not to use the cooked beetroot in vinegar! I added white chocolate chunks to mine and the result was a moist squidy brownie that is lighter than usual but still gives you the chocolate brownie hit. Oh and I made them with spelt flour so they are wheat free.

Sunday Afternoon Treats

I know that I am a bit late with these but made my first batch of whoopie pies at the weekend. These are great little treats and controversially i think that i prefer them to cupcakes! They are much easier to eat for one annnddd you always get a good mouthful of both sponge and filling, unlike a cupcake where it tends to be sponge or buttercream. I went with Red Velvet whoopie pies and used “mallow fluff” in the cream cheese frosting which made it marshmallow sweet and silky in texture. There are going to be lots more of these to come.
